An Argentine grill — also called an asado grill or parilla — is a traditional South American open fire grill that uses hardwood or charcoal as the heat source. Unlike a standard barbecue, the Argentine grill uses an adjustable grill grate that can be raised or lowered over the fire to control cooking temperature. The result is a style of cooking that combines high heat searing with slow, gentle rendering — producing a flavour and texture that gas or standard charcoal barbecues cannot replicate.
